Better be popsicle

Summer is here, and who doesn’t want an ice cream in the nice weather?

You’re on a diet? Don’t worry! This is a healthy ice cream. Yes, healhty! ;)

Healthy popsicle
– 2 cups of thick, plain yogurt (Greek or skyr)
– 6 tablespoons of whole milk
– 20 fresh mint leaves
– 1 tablespoon salt
– 1/4 tablespoon of ground black pepper
– 2 tablespoons of honey
– 1 cucumber

Combine all the ingredients in a blender, except from the cucumber. Blend on high speed until thoroughly combined. Slice the cucumber into very thin rounds. Stick the cucumber slices to the inside walls of the popsicle molds, then pour the yogurt mixture into the molds (fill till almost completely full).

Put the molds in the freezer and let stay for 35 minutes before putting popsicle sticks in.
Freeze until completely frozen, around 4-5 hours.
